Vegan Spinach Pesto Pasta Recipe | No Oil

When I decided to go vegan, one of the things I missed most was pesto.
Luckily, there are a lot of different ways to make vegan pesto. In this recipe,
I decided to throw in some extra greens (spinach) and opted out of oil.

add the basil, spinach, garlic, cashews, lemon juice, almond milk, and salt & pepper to your blender

ingredients ▾
– 2 oz. basil (or a couple handfuls)
– 1 oz. spinach (or a couple of small handfuls)
– a few cloves of garlic
– 1/2 cup cashews
– 1/2 lemon juice
– 1/2 cup almond milk
– salt and pepper to taste
– 6-10 oz. pasta noodles

what to do ▾
– add the basil, spinach, garlic, cashews, lemon juice,
almond milk and salt and pepper to your blender
– boil water and cook your pasta according to the directions
– add your pesto to your strained noodles
– top with vegan parmesan cheese or nutritional yeast
– enjoy!
